Ingredients: Japanese rice with organic rice vinegar (Made in France), fresh salmon, , Apple and horseradish mustard.

"Sushi" means "vinegared rice" in Japanese. The rice consumed and grown in Japan is a "japonica" type rice. It is quite short, rounded and rich in starch, which gives it its sticky character.
At the end of a fairly short cooking time, the rice is cooled and flavored with a mixture of rice vinegar, sugar and salt.
It is appreciated by children for its spicy flavor.
Kneaded between the fingers to form small cylinders, I cover with a thin layer of my Apple-Horseradish mustard before covering it with a thin slice of fresh salmon.
This is a classic very popular with lovers of Japanese bites.
