"Amarena" Mustard

Ingredients: Amerena cherry (Prunus cerasus var. Caproniana), organic blond mustard seed, black cherry pulp, organic rice vinegar (Made in France), agricultural white rum, organic hibiscus powder, Aubel syrup (Belgium), salt, natural cherry flavor.

In its dark purple color, this mustard contains Amarena cherries, a variety of bitter morello cherries cooked in a slightly alcoholic syrup. This candied fruit recipe was developed by Gennaro Fabbri in 1925.
The acidity is reinforced with hibiscus flower but the sweetness does not stop at the morello cherries.
With the Aubel syrup, an artisanal product of the family and ancestral Thyssen syrup factory, also known as "Sirop de Liège", the condiment is softened. It is a molasses without added sugar, made from "Sirop de Liège" juice, a molasses of cooked and locally harvested apple and pear.
This original mustard also seduces with its spiciness.
It goes wonderfully with red meats and game. By diluting it with the cooking juices of these meats, create a sauce for the accompanying vegetable.
Combined with a vinaigrette or mayonnaise, the fruity flavor and color of my mustard bring a touch of originality to cooked red beets or julienne of fresh endives.
In thick cream or beaten fromage blanc, add Amarena mustard, a little oil and salt. Accompany cold cuts or hot sausages.
