A bit of history
What does the Assamese word "Hathikuli" mean?
In Assamese "Hati" means "elephant" and "kuli" means "frequent".
These numerous pachyderms as well as a large population of Indian unicorn rhinoceroses unique in the world, are used to frequenting the many plantations located in a vast floodplain during the monsoons.
This black tea with woody flavors has the reputation of being a fine fine tea with notes of caramel and cinnamon.
It is produced in the center in the state of Assam, a region located in the center of northeastern India. Bangladesh and Bhutan are the 2 main neighboring countries on its borders. It is part of a territory of 7 states forming a Y from which many mineral resources are extracted.
The subtropical climate with a monsoon regime allows the employment of more than 2 thirds of the population in the field of agriculture.
Fruits, spices and edible roots are produced with a low yield due to lack of modernization.
The wealth of its agriculture is its tea, "Camellia sinensis var. assamica", an indigenous tea known to be the most expensive in the world.
The discovery of this unique variety of tea is attributed to a Scottish adventurer named Robert Bruce in 1827. He obtained samples and seeds from the natives to study them. He died shortly after without having recorded the plant consumed. His brother Charles had the analysis resumed by the laboratory of the botanical garden of Calcutta which identified this plant as a distinct variety of Chinese tea (Camellia sinensis var. sinensis).

My flavored tea recipe
I chose to call my flavored Assam black tea "Seville" for Spain's close history with cocoa, an ancient drink originating in the New World and borrowed from the Atzèque people.
The oranges of Seville, the capital of Andalusia, are the city producing the largest tonnage of juice and bitter oranges in the world with 400,000 different varieties. Orange trees are everywhere, in the parks, the streets sometimes creating urban pollution because these marmalade oranges litter the streets and are not consumed.
Orange and cocoa in the naturally flavored Assam tea, offers a slightly spicy drink, with a nice length in the mouth.
The notes of cocoa blend happily with the slight bitterness of the orange peels and the comforting infusion provides a pleasant feeling of warmth.
Your infusion will be done in 2 minutes in water at 90 ° C with a preliminary rinse with hot water.
Remove the decoction and repeat a little later with a new infusion with a little less water but at the same temperature to still appreciate the flavors still present.

How to prepare your flavored Ceylon tea?
Heat water between 85° and 90°C, rinse the tea by pouring a little water over the tea, then discard it.
Add the tea to the teapot filter and let it steep for 2 minutes or 3 minutes if you prefer a bitter taste.
Repeat your infusion for your enjoyment!
Heat slightly less water but at the same temperature and let it steep for another
2 minutes. You'll enjoy the flavors that are still present.
Small biscuits for breakfast or a chocolate pastry are a delicious and sweet way to accompany your drink.
