A little of history
The history of vinegar and mankind goes back more than 8,000 years. Archaeological traces have been found in Egypt and China. Babylonian writings describe the use of vinegar for food preservation.
The discovery of vinegar was probably accidental: beer, a fermented beverage, or wine, left uncorked for a long time, turned into an acidic liquid.
Hippocrates, a Greek physician and philosopher and folk medicine prescribed vinegar for both prevention and medical treatment.

How do I use blackberry culinary vinegar in cooking?
Culinary vinegar is a preparation that consists of infusing fruits, spices, or plants in vinegar, either hot or cold.

This vinegar is remarkable for its fruity flavor from the blackberries grown near my town. It has the deep purple color of these beautiful sweet fruits.
Fruit and honey slightly thicken the rice vinegar when infused hot. The most surprising thing about this condiment is the subtle and pleasant aroma of violet. Its scent and flavor soften the acidity.
In cooking, this condiment can be used for more than just a vinaigrette. Blackberry flavor is a great match for finely shredded red cabbage or cooked beetroot.
To create a delicious and flavorful meat or poultry jus, nothing could be easier.
Roast meat with an aromatic vegetable garnish. Deglaze regularly during cooking, reduce the resulting juices between each step, and turn the meat for even cooking. Deglaze one last time with the vinegar, remove the meat, and reduce to obtain a syrupy juice to skim off the fat before serving.
For baking recipes, let your imagination run wild.
In a cake batter, the reaction of vinegar with baking soda produces carbon dioxide bubbles contained in the baking powder, which form throughout the baking process, creating a fluffy texture.
To achieve stiff egg whites, add a few drops of vinegar.
Make a meringue with 2 egg whites and 120g of sugar, then heat to 55°C in a mixer bowl over a bain-marie. Whisk until stiff peaks form with a few drops of blackberry vinegar and 1 tsp. of hibiscus flower powder. Using a flexible spatula, add 1 tsp. of cornstarch and bake in a 100°C oven for about 1.5 hours.
Another benefit of vinegar in baking: it balances flavors by reducing the sweetness of a dessert.
