A bit of history
In ancient times, oily macerates were used as cosmetic products. The Egyptians infused flowers in oil to perfume the skin and treat minor illnesses.
It was also a remedy, the most well-known being the oil of mille-pertuis flowers, a plant associated with magic and witchcraft. It was prescribed by Roman physicians for mental disorders.
The Greeks, Romans, and Egyptians flavored olive oil, the only oily ingredient of the time, with all sorts of plants and spices. Its value was considerable because it served as currency.
As for citrus fruits, the citron tree (Citrus medica) is said to have arrived from Asia via Egypt by sea and trade from India 300 years before the Christian era. The history of the lemon tree (Citrus limon) and the Romans begins in the 1st century AD.
How to use citrus zest-flavored cooking oil in cooking and everyday life?
Here are some ideas from the Chef.
A macerate is an oil infused with plants, spices, or flowers. It is not an artificially flavored oil.
Deodorized olive oil differs in its ability to withstand higher temperatures than virgin olive oil, which becomes bitter at high temperatures. Its flavor is also altered, and it loses its typical pigments.
I recommend not frying with my flavored oils, but heating them with a liquid, such as pouring a drizzle over a velouté or inside a fish parcel.
While vinaigrette is an obvious use, an oil marinade is also possible, similar to anchovies.
Simmer fresh herring fillets or small red mullet fillets in coarse salt for a few hours. Wash the fish fillets in clean water, dry them on a cloth, and store in an airtight container. Add herbs (thyme, bay leaf, savory, etc.) and cover with oil to serve a few days later with raw vegetables. Keep refrigerated.
