The history of vinegar and mankind goes back more than 8,000 years. Archaeological traces have been found in Egypt and China. Babylonian writings describe the use of vinegar for food preservation.
The discovery of vinegar was probably accidental: beer, a fermented beverage, or wine, left uncorked for a long time, turned into an acidic liquid.
Hippocrates, a Greek physician philosopher and folk medicine prescribed vinegar for both prevention and medical treatment.
The mango: queen of tropical fruits.
Mango trees are native to India, Bangladesh, and Burma.
Europeans only discovered it in the mid-15th century through an Italian traveler, the first known explorer of India.
Of the hundreds of mango species cultivated worldwide, only a few varieties are commercially available.
Small wild species with edible fruits exist in Africa and its native countries.
Rich in fiber, visible in overripe fruit, a mango, with a flavor comparable to a peach, weighs 400g to 1kg.
Annual global production is around 55 million tons, making the mango the most consumed tropical fruit in the world, ahead of the banana.
How to use mango culinary vinegar?
Culinary vinegar is a preparation that consists of infusing fruits, spices, or plants in vinegar, either hot or cold.
Sweetness and fruitiness characterize this condiment with a slightly syrupy texture, thanks to the infusion of honey and slightly gelatinous mango pulp.
Vinegar is great for salad dressing, but not only!
It's an excellent food preserver, and in the past, along with salt and smoking, it was one of the main preservation methods.
Peel some spring onions and fresh garlic cloves. In a jar, cover with mango vinegar, add a small chili pepper, bay leaf, and a little rum. Wait two weeks and enjoy this preserve with an aperitif.
For carrot crudité, baked or fried sweet potato, deseed a pomegranate, add mango vinegar, a little soy sauce, and chili oil.
For baking recipes, vinegar has its advantages. In a cake batter, the reaction of vinegar with baking soda produces carbon dioxide bubbles contained in the baking powder, which form throughout the baking process, creating a moist texture.
Experiment by flavoring a cake with a little mango vinegar and incorporating diced fresh mango.
To achieve stiff egg whites, add a few drops of vinegar.
Another benefit of vinegar in baking: it balances flavors by reducing the sweetness of a dessert.
To obtain a smooth caramel, carefully deglaze with mango vinegar, which accompanies fruit cooked in syrup, such as pears or yellow peaches.
