A bit of history
Karkade is the national drink of several African countries such as Guinea, Benin or Senegal.
This drink is made from hibiscus flowers or "Guinea sorrel", a fast-growing plant native to Africa whose cultivation development first took place in Southeast Asia, notably in India, Sri Lanka or Thailand.
Cultivars appeared in West Africa in the 19th century and quickly spread to tropical areas.
Egypt and Sudan call this drink with hibiscus flowers cultivated up to the desert gates, "karkade" also spelled "carcadet".
From Africa to Asia, this species of hibiscus is from the Malvaceae family which has more than 4000 species divided into more than 400 genera.
Senegal calls it "bissap" a word from the "wolof" language and for the Congo, it is "Ngai Ngai". In the Antilles, it is the "country gooseberry" or simply "gooseberry".
In Mexico, it is the "flor de Jamaica".
There are two varieties of this hibiscus consumed as a drink with the flowers or as vegetables with fresh leaves: one has red flowers and the other has white flowers.
The latter are famous in Senegal because they are used in the composition of "thiéboudienne", a popular dish made with rice and fish.

Among other things, it is recognized for lowering blood pressure and preventing hypertension, a cardiovascular risk through drinkable infusions. Soaked compresses reduce skin diseases such as eczema or dermatoses.

How do I prepare the herbal tea?
The herbal tea can be used as a cooking bath for fruits such as pears or persimmons. Add 200g of sugar per liter of tea before cooking the fruit.
In summer, this same thirst-quenching acidity is achieved with a cold infusion for a dozen hours and in the cool.
Do you prefer it hot? Let the mixture infuse for several minutes in water heated to 90 °, filter and serve in a large cup.
