A bit of history
The tradition of Christmas tea is now centuries old.
Spices, tea and sometimes citrus fruits, compose it. It was in England under the reign of Queen Victoria that the tradition of drinking flavored tea was born.
Russia and Germany are associated with this tradition because it is common to drink mulled wine or spiced tea to protect oneself from the harshness of winter.
In the 1930s, the Temperance League served flavored tea at the
end-of-year celebrations to serve its cause among the working classes: to keep thousands of people away from alcohol consumption.
It was only in 1980 that France discovered Christmas tea marketed for the first time by the "Compagnie Colonniale".
The Ceylon Tea
Ceylon Dimbula Elephant tea is grown in Sri Lanka in the Dimbulla province, located in the center of the country. It has beautiful dark leaves with a sweet and fruity flavor. Its infusion is clear, and Ceylon tea lovers prefer it for breakfast. The teas from this region, like all the country's tea-producing regions, enjoy an international reputation, particularly favored by the British royal family. Cultivation at high altitudes benefits from a tropical climate punctuated by two monsoon periods.
There are many versions of so-called "Christmas" black tea. My recipe is both traditional and original, thanks to the fragrant ingredients that make it unique. The qualities of Ceylon tea are a boon for the introduction of carefully selected and carefully measured aromatic spices. They darken the color of the cup, which develops all its aromas, providing a pleasant and warm sensation.
How to prepare your flavored Ceylon tea?
Heat water between 85° and 90°C, rinse the tea by pouring a little water over the tea, then discard it.
Add the tea to the teapot filter and let it steep for 2 minutes or 3 minutes if you prefer a bitter taste.
Repeat your infusion for your enjoyment!
Heat slightly less water but at the same temperature and let it steep for another 2 minutes. You'll enjoy the flavors that are still present.
