A bit of history
The history of vinegar and mankind goes back more than 8,000 years. Archaeological traces have been found in Egypt and China. Babylonian writings describe the use of vinegar for food preservation.
The discovery of vinegar was probably accidental: beer, a fermented beverage, or wine, left uncorked for a long time, turned into an acidic liquid.
Hippocrates, a Greek physician and philosopher and folk medicine prescribed vinegar for both prevention and medical treatment.
Raspberry: Ida's Bramble
Raspberry is the fruit of the raspberry bush, Rubus ideaus in botanical terms. The shape of the fruit is associated with the female nipple. Its blood-red color comes from an ancient Greek legend. Queen Ida, wife of the King of Crete and wet nurse of Zeus, wanting to calm a child who was crying continuously, picked white raspberries to calm him. In doing so, she scratched her breast and the fruit turned red. The "Ida bramble" became the raspberry bush.

My raspberry vinegar is a culinary preparation.
"Aubel" syrup, also known as "Liège syrup" (Belgium) and elderberry reduce the natural acidity of the condiment, which has become syrupy after several hours of gentle cooking.
It can be used to flavour hot or cold sauces, fruit syrups. A few drops are enough to season raw vegetables or crisp salad leaves.

How to use raspberry culinary vinegar?
Culinary vinegar is a preparation that consists of infusing fruits, spices, or plants in vinegar, either hot or cold.
Raspberry vinegar is often paired with calf's liver or duck breast. Barely cooked raspberries are added to the sauce before serving.
My dark-colored vinegar is slightly acidic, and sweetened with Aubel syrup or Liège syrup. This unique specialty from the Belgian Ardennes is a molasses made from local apple and pear juice. It is produced by an artisanal syrup factory with eight generations of syrup makers.
