Ingredients: Organic turmeric rhizome, coriander, mustard, 160 ASTA* paprika, kaffir lime, Gorilla pepper (Piper guinense), fenugreek, cardamom, ajowan (Trachyspermum ammi), star anise, mace (Myristica fragrans).
"Colombo" is both a blend of spices and the name of a recipe from the West Indies and Guyana.
It is a variant of "garam masala " and "curry" introduced by Indian soldiers engaged in the British army, then masters of the West Indies in the 19th century.
The ingredients differ in favor of local ingredients. "Colombo" or "West Indian Curry" is very different from that used in South India or Sri Lanka.
The traditional dish called "Colombo" differs from Guadeloupe to Martinique where the Indian community is smaller. My blend is spicier than my Yellow Curry.
The roasting of some of its ingredients enhances the fragrance of the blend and gives it a particular flavor.
Poultry, vegetables, all kinds of spicy cooking recipes suit it.
Add banana and carrots to a poultry fricassee, flavor with Colombo and serve with steamed long rice.
Make a mango salad drizzled with my Lemon Vinegar and seasoned with brown sugar, flavor with my spice and serve with vanilla ice cream.
