A bit of history
In ancient times, macerates were cosmetic products. The Egyptians infused flowers in oil to perfume the skin and treat minor illnesses.
The Greeks, Romans, and Egyptians flavored olive oil, the only oily ingredient of the time, with all sorts of plants and spices. Its value was considerable because it served as currency.
This cosmopolitan plant, known for its relaxing properties, is the most well-known aromatic plant in Europe. Ancient times attributed numerous medicinal and magical virtues to it.
The Romans called it "Venus herb" for its supposed attraction to love.
In the past, popular belief held it to be a "cure-all" or "sacred herb."

How to use verbena-scented culinary oil in cooking and everyday life?
Here are some ideas from the Chef.
A macerate is an oil infused with plants, spices, or flowers. It is not an artificially flavored oil.
Deodorized olive oil differs in its ability to withstand higher temperatures than virgin olive oil, which becomes bitter at high temperatures. Its flavor is also different, and it loses its typical pigments. I recommend not frying with my flavored oils, but heating them with a liquid, such as pouring a drizzle over a velouté or inside a fish parcel.
For a vinaigrette, add a combination of white vinegar (rice, sherry, cider, etc.) and apple or peach juice to the verbena oil. This original sauce seasons a few salad leaves, raw tomatoes, and grated carrots.
Wow your friends and family with a macedoine of raw apples in a light syrup and a drizzle of verbena oil poured over the fruit at the last minute.
Try this oil with plain mashed potatoes or with "panisses," a Mediterranean specialty made with chickpea flour.
