Organic mustard seed, organic orange peels, Passion berries (Ruta chalepensis), mango pulp, Penja white pepper (Piper nigrum)salt, organic olive oil (Made in France), organic rice vinegar ((Made in France), chickpea flour, natural organic mango flavour. 

A bit of history
Ground mustard seeds, known since ancient times by the Greeks, Egyptians, and Romans, were added to foods.
From the 1st-century AD Roman agronomist Columella to Apicius and his cookbook "De Re Coquinaria," Roman mustard recipes were introduced to Gaul under the name "mustum ardens," meaning "burning must," which would become the word "mustard."
It was in the 13th century that recipes appeared in France, using condiments made near great vineyards such as Bordeaux and Reims.
The spicy flavor of the seeds, unlike chili peppers, is the result of a chemical reaction. The seeds, crushed and mixed with water, develop sensitive molecules upon contact with our mucous membranes.
In India, and particularly in Bengal, cooked mustard seeds are used to flavor oil.
In France, a decree defines the list of ingredients authorized to obtain the name mustard.
The most common condiments consist mainly of mustard seeds, honey, white wine or vinegar, and milk.

My recipe for homemade mango mustard
Mustard is the most consumed condiment in the world, ahead of salt and pepper.
To be recognized, my artisanal mustard must combine the characteristics of a good condiment.
Naturally spicy but not overpowering, the omnipresent mango flavor makes it unique.
The fruitiness is enhanced by passion berry, a fruit of an Ethiopian rutaceae family, and orange juice. Its creaminess, free of gluten, is excellent and slightly oily.
Turmeric, a dye plant, provides a beautiful sun-kissed color and a slight bitterness.

How do I use my mango mustard?
Chef's Little Tips
A fruity mustard is no ordinary condiment. Its design and ingredients open up varied and original culinary uses.
In everyday use and on your table, its creaminess awaits the edge of your plate to season your cooked meats or fish.
Incorporate mango mustard into the batter of a savory cake. Top this batter with diced carrots cooked in white vinegar or my mango vinegar. Add pieces of smoked salmon and bake as usual.
Generously coat oiled bread slices with mango mustard. Cover with apple slices and goat cheese. Bake for a few minutes in a hot oven and place under the grill before serving with beautiful seasoned salad leaves or simply as an appetizer.
To whipped cream, add mango mustard, a dash of soy sauce, and chopped fresh sweet chili pepper. Drizzle over cooked potato slices for a unique salad.
