A bit of history
In Hindi, "chai" means "tea." It comes from the Mandarin "cha," which was taken over by the Persian language as "chay."
The French term "chai tea " is therefore a pleonasm.
In India, "masala chai" is a blend of spices used to flavor very strong black tea mixed with sweetened boiling milk.
Many countries, from Asia to Africa, have adopted this way of preparing tea.
The composition of "masala" varies little in India, as the only thing that matters is the method of preparing Assam black tea.
This millennia-old spice blend has its origins in Ayurvedic medicine. Its use in tea is a consequence of English colonization and their introduction of tea culture in the 19th century.
Today, it is an institutional drink in India and its reputation is worldwide.
What's in my Chai spice blend?
Close to the almost universal composition of this spice, the search for balance and a unique note motivated its creation.
Sishuan berry, a false pepper from the Zantoxylum family, brings its lemony flavor to the blend.
The spices are roasted before grinding, creating a delicious aroma similar to coffee.
This artisanal "masala" contains no sugar, which you can add as you wish, Indian style.
How do I use my Chai spice blend daily?
In India and other countries, "masala chai" is reserved for tea, preferably black and strong. Highly fermented black tea is rich in flavonoids, an antioxidant that fights the aging of our cells.
If you follow their recipe, the spices are boiled in milk, sometimes very sweet, then added to the steeped tea.
Long before the arrival of tea in India, the spice blend flavored hot milk with herbs.
This recipe, with added sugar, can also be used to bake wheat or millet semolina to make a very popular cake. Add raisins and you're done!
Masala chai is similar to spices used for other purposes. This is the case with "Duke's Spice," which is part of my range of artisanal spices.
You can incorporate it into meat stuffings.
At the end of cooking, flavor a meat gravy or a thick soup with cream or plant-based milk.
In baking, a pinch of masala chai enhances a dark chocolate sauce.
Sprinkle it on your apple or pear tart at the last minute before topping it or after caramelizing it under the broiler.
