A bit of history
"Dukkah" or "duqqa" comes from an Arabic word meaning "to pound."
The cuisine of Egypt is Mediterranean with Levantine origins.
In its country of origin, it contains oilseeds such as almonds and hazelnuts.
It is a versatile spice for all kinds of ingredients, from vegetables to salads, meat to fish.
Traditionally, bread is dipped in olive oil and then in the spice mixture.
Like all folk spices, the ingredients vary from region to region, as it is also prepared throughout the Middle East.
Its texture is neither a powder nor a paste, but a pounding of spices and dried fruits."
What's in my spice?
Sunflower and pumpkin seeds replace the nuts in a traditional blend. People allergic to these fruits will appreciate their absence.
These oilseeds, however, have the same texture as walnuts or almonds. When ground into a powder, they change the texture, making it pasty.
When cooked, this texture thickens all kinds of juices.
Be careful, however, to skim the fat off them before adding the Dukkah paste, which is naturally coated with the seeds.
My spice is enhanced with chili pepper and should be used with moderation and caution.
How to use Dukkah paste in cooking recipes?
It's the condiment of Mediterranean recipes.
A spice paste has almost the same effect as flour, and cooking it thickens the liquid used.
It's best not to boil a juice mixed with spicy and slightly salty Dukkah paste indefinitely. Prolonged cooking increases the heat of the chili and concentrates the salt.
Prefer a generous, slightly thickened juice to a dense, very powerful one. Stuff stale bread generously coated with batter into the belly of a ready-to-cook poultry to flavor the meat while it cooks.
For a vinaigrette, mix a little dukkah with vinegar and reduce the amount of oil.
In a stir-fry, coat pre-cooked meats before adding the cooking liquid.
It's a unique ingredient for savory shortbread appetizers.
Its beautiful red color pairs well with a tomato velouté, grilled peppers, or a marinade for grilled meats.
Ground pork spiced with dukkah makes delicious vegetable stuffings.
