Ingredients: Organic caraway seed, Shishuan berry (Zanthoxylum bungeanum), organic caradamom seed, organic turmeric rhizome, organic ginger rhizome, star anise, sumac (Rhus coriaria), salt, organic mustard seed, fenugreek, cloves, Habanero chilli pepper.
“Shawarma” refers to a traditional meat or poultry dish of Turkish and Levantine cooking.
Like all traditional cuisine recipes around the world, the recipe varies from one region or country to another.
The preparation fills a “pita” or “pitta” bread, also called “Arabian bread” or “Turkish bread”, in different shapes depending on the region.
This round and flat bread, of which we find prehistoric traces in the Middle East, is today widely distributed in Europe.
In Turkey, meat marinated in very spicy vinegar then placed on a spit in thin strips is called “döner kebab", “the grill that turns”.
My blend brings together the ingredients of a spice that could be found in this part of the world where spices are inseparable from its gastronomy.
Seasoning my “Shawarma” blend spices with cooked vegetables, roasted or grilled meats enhances the flavors of foods and brings exoticism.
Make a small dough made up of a little blend spices, a little water and olive oil. Lightly cover thin slices of baguette with seeds and brown them for a few seconds under the oven grill.
Serve this toast with a very cold sangria or a very cold white wine from Beaujolais.
