Ingredients: Organic rice vinegar (Made in France), papaya pulp, flower honey (Local beekeeping), safflower (Carthamus tinctoria), natural passion fruit flavoring, salt.
The papaya is a huge berry that weighs from 1 to 5 kilos.
Native to the Americas, the papaya was introduced to Africa and India by the Spanish in the mid-16th century.
For the Spanish, this fruit, discovered upon their arrival in South America, reminded them somewhat of a melon.
Did you know that the pulp isn't the only attraction of this fruit?
When unripe, the skin of the fruit secretes a latex collected by incision. Its rapid coagulation in the sun or artificially allows the recovery of a juice from which a useful enzyme, papain, is extracted.
in pharmacopoeia. This latex is also used to make chewing gum.
Pre-Columbian Caribbean peoples treated digestive disorders and other ailments with the green fruit, its seeds, and its juice.
In food, the leaves of the papaya tree were used to tenderize meat.
In Asia, pieces of green papaya are added to cook octopus because the papain contained in the fruit tenderizes the cephalopods' flesh.
It is a must-have in Thai salad and "goi" salad, a traditional Vietnamese dish.
Cooked in rice vinegar, I suggest you use this sweet, fruity, slightly acidic, and slightly syrupy condiment in your cooking.
By adding lemon juice, a little chili, fish or oyster sauce, you can create a vinaigrette for a Thai salad with shrimp tails, tomato, and fruit. Make a syrup with the vinegar for fresh pineapple slices.
Drizzle a little of my vinegar over fish cooked en papillote with vegetables.
At the end of cooking a beef steak in butter, deglaze with the vinegar to obtain a tangy jus.
Make a thin mayonnaise with egg yolks, a little mustard, plenty of papye vinegar, and a little grilled sesame oil. This sauce goes well with raw fish and shellfish.
