Ingredients: Sunflower seed, assortment of organic spices and condiments (onion, garlic, anise seed, caraway seed, coriander seed, ginger rhizome, lemongrass, cinnamon), Habanero pepper, Muscovado sugar, mace, clove, bay leaf (Laurus nobilis).
I was inspired by Thai cuisine to make this curry rich in spices.
This condiment of Persian origin and Muslim tradition was introduced to Thailand in the 18th century. The word "massaman" would refer to the word "Muslim" in the Persian language.
The Muslims of the Middle East in their trade with Asia, brought to this country spices that were then little used such as bay leaf, cardamom, mace and nutmeg.
Like all Asian curries and especially in Thailand, its flavor is very spicy, even burning. The influence of European settlers has since modified the initial composition of the mixture presented in the form of paste in Thailand.
The salty-sweet flavor of my composition pleasantly perfumes shellfish and white meats.
The shrimp powder brings an ocean note that combines with roast poultry.
Make a stir-fry of lamb or beef cooked in coconut milk and seasoned with my curry.
With a roast chicken in the oven, add onions, cashew nuts, potato slices. At the end of cooking, skim the juice, add orange juice and reduce the juice obtained before serving.
