Ingredients: Lemon zest, cinnamon, pomegranate, organic Damask rose, organic cardamom, organic ginger rhizome, Selim pepper (Xylopia aethiopica), mace (Myristica fragrans), organic sesame, organic coriander, safflower (Carthamus tinctorius).
This is the most common spice blend in the cuisine of Iran and neighboring Iraq.
My spice blend is inspired by Persian cooking, a gastronomy that goes back several millennia and is the basis of many Middle Eastern cooking recipes.
This condiment flavors many popular dishes and comes in several versions:
- Advieh-e polo seasons rice and vegetables.
- Advieh berenj, with a slightly different composition, has the same function.
- Advieh ash, with its more spicy flavor, is preferred for soups .
I chose the Advieh-e korech version to season rice as well as vegetables and stewed meats, "koresh" in the Persian language.
In its local version, it contains Iranian black lemon, which I replaced abundantly with yellow lemon zest.
The rose dominates the non-spicy blend. The sweetness of my spice is combined with cooking recipes with oriental accents.
A wheat or millet semolina, grilled eggplants or a salad of ripe tomatoes seasoned with this spice have a completely different look.
