Ingredients
Amerena cherry (Prunus cerasus var. Caproniana), organic blond mustard seed, black cherry pulp, organic rice vinegar (Made in France), agricultural white rum, organic hibiscus powder, Aubel syrup (Belgium), salt, natural cherry flavor.

A bit of history
Ground mustard seeds, known since ancient times by the Greeks, Egyptians, and Romans, were added to foods.
From the 1st-century AD Roman agronomist Columella to Apicius and his cookbook "De Re Coquinaria," Roman mustard recipes were introduced to Gaul under the name "mustum ardens," meaning "burning must," which would become the word "mustard."
It was in the 13th century that recipes appeared in France, with condiments made near the great vineyards such as Bordeaux and Reims. The spicy flavor of the seeds, unlike chili peppers, is the result of a chemical reaction. The seeds, ground and mixed with water, develop sensitive molecules when they come into contact with our mucous membranes.
In India, and especially in Bengal, cooked mustard seeds are used to flavor oil.
In France, a decree defines the list of ingredients authorized to qualify for the label "mustard."
The most common condiments consist mainly of mustard seeds, honey, white wine or vinegar, and milk.

My recipe for homemade cherry mustard
Mustard is the most consumed condiment in the world, ahead of salt and pepper.
To be recognized, my homemade mustard must combine the characteristics of a good condiment.
In its dark purple color, this mustard contains Amarena cherries, a sweet Italian recipe well-known in the world of gastronomy. This recipe, created by Gennaro Fabbri in 1925, involves cooking a variety of bitter morello cherry in a slightly alcoholic syrup.
Its creaminess, free of traces of gluten, is excellent, and the presence of whole fruits is a surprise.

How do I use my cherry and Amarena mustard?
Chef's Little Tips
A fruity mustard is not an ordinary condiment. Its design and ingredients open up varied and original culinary uses.
Roasted or grilled meats, game, and charcuterie have strong flavors that, for those who prefer a mild condiment, are ideal.
You can also incorporate it into cooking recipes.
Appetizer biscuits: Make a savory shortcrust pastry with Parmesan and cherry mustard and pieces of Amarena. Add caraway or cumin seeds. Roll out the dough, cut it out, brush with egg yolk, and bake in a hot oven.
In cherry mustard, incorporate egg yolk, breadcrumbs, and a dash of wine vinegar to obtain a soft dough. Brown some pork chops and coat them generously with the mustard paste. Finish cooking in a hot oven before browning under the broiler.
