Organic sesame oil (Made in France), organic carrot leaf (Local agriculture), laurus (Laurus nobilis), organic fennel seed, ajowan (Trachyspermum ammi).
A bit of history
In ancient times, macerates were cosmetic products. The Egyptians infused flowers in oil to perfume the skin and treat minor illnesses.
It was also a remedy, the most well-known being the oil of mille-pertuis flowers, a plant associated with magic and witchcraft. It was prescribed by Roman physicians for mental disorders.
The Greeks, Romans, and Egyptians flavored olive oil, the only oily ingredient of the time, with all sorts of plants and spices. Its value was considerable because it served as currency.
What is an oil infused with carrot tops?
You need beautiful, freshly cut carrot tops.
These leaves are rich in beneficial vitamins, and the chlorophyll contained in the stems dyes the macerate dark green. The infusion is done at a low temperature and for a long time in sesame oil made in France. With ajwain seeds, a seed native to India, and fennel seeds, Foeniculum, or hay in Latin, subtly brings the aromas of anise, licorice, and thyme.
How to cook with carrot top oil?
Little Chef's Tips.
In my opinion, this flavored oil is not made for frying.
It can be heated, but not too much, or with another liquid.
Obviously, oils are reminiscent of vinaigrettes.
A warm vinaigrette, for example, is made by gently heating 2/3 carrot top oil with 1/3 rice or cider vinegar. Add a little honey or substitute with my Honey and Yuzu Vinegar. Keep this sauce simple by topping boiled potato slices, leeks cooked in broth, or a salad with leftover stew.
Add parsley, salt, freshly ground pepper, lychee juice, or apple juice to carrot top oil. Cover slices of veal belly or pork ribs with the marinade and refrigerate for 36 hours. Drain and remove any parsley particles from the meat. Grill or barbecue, reserving the marinade. Bring it to a boil in a small saucepan and, off the heat, add egg yolk, a little vinegar, and mustard. Blend to obtain a consistency.
