Ingredients: Sishuan berry (Zantoxylum burgeanum), coconut blossom sugar, Himalayan black salt, organic caraway seed, organic ginger rhizome, organic coriander seed, mace (Myristica fragans), organic turmeric rhizome, lemon zest.
"Chaât masala" is a curry or "kari" in Hindi, little known to the general public.
"Masala" means "blend of spices" and still in Hindi, "Chāt" means "finger-licking good"!.
It is almost a curry based on mango, a very common fruit in Asia
As in the regional version of this spice mix from India, I introduced the black Himalayan salt called "kalak namak".
In its raw state, it is a sulfurous salt that is mainly found in the Nepalese Himalayas.
Its salty flavor comes from sodium chloride. Iron sulfide gives it its dark brown-purple color.
Other chemical elements give it its slight acidity and other flavors.
To be ground into powder by hand and marketed, the salt crystals undergo a long process: heated for 24 hours in an oven, the sodium sulfate is transformed into hydrogen sulfide, giving the salt that pungent smell of rotten eggs.
We add coal ore, plant seeds and salt that is kept to age.
This unusual blend of spices and mango makes it a very different curry.
My blend combines a light acidic flavor and a pleasant salty-sweet.
The absence of chili allows you to season culinary preparations without fear.
Season coral lentils with a vegetable milk flavored with this curry and accompany it all with a chicken escalope steamed with sprigs of thyme.
Sprinkle generously with Chāt masālā on fried eggs that you grill well. Add small cubes of red pepper, add a dash of my ginger vinegar, a few coriander leaves and pour the mixture over potatoes fried in oil.
