Ingredients: Assortment of organic plants and spices (coriander leaf, onion, lovage (Levisticum officinale), turmeric rhizome, lemon peel, mustard seed, fennel seed, fenugreek, garlic), toasted sesame oil (Made in France), kaloupilé leaf (Murraya koenigii).

The "French Curry" called "Vadouvan" in the Hindu language, is a mixture of spices, a curry or "kari".
This spice echoes the 5 old French colonial trading posts in India: Pondicherry (Puducherry), Chandernagor, Mahé, Yanahon, Karikal.
This mixture is the result of an adaptation of traditional Indian spice blends to French tastes and culinary techniques. Its subtle and sweet flavor is a culinary treasure and the result of a gastronomic fusion. The "French touch" gives its richness to this bouquet of exotic aromas.
Its composition unites classic Indian spices and typically French ingredients.
Like any traditional spice, its composition varies from one region to another as does its presentation: in leaves, powder or paste form.
Known in France since the 18th century, vadouvan and curries are mentioned in the culinary works of Antonin Carême and Auguste Escoffier.
The proposed version is composed of aromatic seeds and plants. The whole is very lightly coated with toasted organic sesame oil.
This presentation invites you to infuse this mixture like a tea.
It enhances without raising a vegetable or meat broth.
Infuse coconut milk and filter before further use.
Stuff a whole poultry with "vadouvan" mixed with pieces of stale bread before roasting it in the oven.
Make a vinaigrette by infusing Vadouvan in a little of my Kumquat and Peach Vinegar  over a very low heat. Filter and add Kumquat Mustard. Emulsify this sauce with 1 third of virgin olive oil with 2 thirds of sunflower oil. Season raw vegetables such as Chinese cabbage or slices of browned potatoes.
Infuse in a light syrup of French Curry, filter and let pineapple slices and pieces of ripe mango marinate overnight. Serve this duo of fruits with a chocolate fondant.
