Ingredients
Organic brown and blond mustard seed, kumquat vinegar, chickpea flour, kumquat, organic garlic, organic rice vinegar (Made in France), organic turmeric rhizome, salt.
A Bit of History
Ground mustard seeds, known since ancient times by the Greeks, Egyptians, and Romans, were added to foods.
From the 1st-century AD Roman agronomist Columella to Apicius and his cookbook "De Re Coquinaria," Roman mustard recipes were introduced to Gaul under the name "mustum ardens," meaning "burning must," which became the word "mustard."
It was from the 13th century onward that recipes appeared in France with condiments made near the great vineyards such as Bordeaux and Reims.
In India, and mainly in Bengal, cooked mustard seeds are used to flavor oil.
In France, a decree defines the list of ingredients authorized to obtain the appellation of mustard. The most common condiments consist mainly of mustard seed, honey, white wine or vinegar and milk.A fragrant mustard must be a very aromatic, spicy and tangy condiment.
My kumquat mustard recipe
Kumquat, or "Fortunella margarita" botanically, is a genus of citrus fruit whose species are native to the Far East.
The fruit, like the citrus fruit, is called kumquat and is known for being low in calories and rich in antioxidants. Slightly bitter, the fruit has no juice but a pulp containing large seeds. It can be eaten as is or incorporated into culinary preparations.
Infused in rice vinegar, I then add the ingredients necessary for my recipe. Like a whole-grain mustard, the condiment's texture is slightly crunchy with black mustard seeds for a tangy flavor.
It's a mild mustard where the peach flavor adds an inimitable sweet note.
How to use kumquat mustard?

Mustard is primarily an occasional or everyday table condiment.
It's the most consumed food in the world, ahead of salt and pepper. It's present in a large number of countries, and its production varies from one to another.
A mild, fruity mustard like my condiment is easy to use in culinary preparations. The addition of fruit pieces is a plus.
- In a savory cake for an hors d'oeuvre or appetizer, add kumquat mustard to the batter. Add chunks of candied tomato, a dose of Red Curry, and diced red peppers, and you have an original and, indeed, vegetarian cake.
- Add my mustard to make small pancakes cooked in butter and pancakes in a plain mashed potato with eggs, flour, and milk.
- Fry eggplant slices. Coat each slice with mustard, sprinkle with coriander leaves and a julienne of cured ham. Mix the egg with mascarpone or a similar cheese. Cover the eggplant slices and then grill.
