A bit of history
The extraordinary scent of vanilla leaves no one indifferent. The 20cm long black, thin or full of substance, is the fruit of a liana orchid from the tropical rainforests of Mesoamerican origin.
Its reproduction was ensured by cuttings well before the arrival of the Spanish colonists on the territory of the Atzèques.
The most famous is the vanilla called "from Bourbon Island" now called Reunion Island. It owes its global boom to artificial pollination started in 1836 first in a botanical garden in Belgium. In 1841, production was accelerated thanks to the ingenuity of a young slave, Edmond Albius, with a practical process still used today.
In 1880, Reunion Island planters successfully introduced vanilla to Madagascar. Its production will reach 1000 tons in the 30s.
Nowadays, vanilla cultivation occupies a vast global territory in the tropical rainforests.
Tahiti, Mayotte, Mauritius to name a few as well as the Comoros where the LVMH Group is at the origin of the establishment of vanilla for its Guerlain brand. The production of this spice is the only wealth of these islands with cloves, another spice that is occasionally used to make "vanillin".
As for vinegar, and its likely accidental discovery by humans, dates back over 8,000 years.
Hippocrates, a Greek physician and philosopher and folk medicine prescribed vinegar for both prevention and medical treatment.
How to use vanilla culinary vinegar?
A culinary vinegar is a preparation that involves infusing fruits, spices, or plants in hot or cold vinegar.
As soon as you open the bottle, the scent of vanilla is immediately apparent. The sweet flavor of jamin captivates the liqueur and the palate.
Vanilla is most often used in baking.
Infused in sweet rice vinegar softened with honey, what can you season it with?
Here are some original and exotic ideas to explore.
Let's start with cucumber cut into small cubes and seasoned with a little salt and sugar.
Make a sauce with the vanilla vinegar, pumpkin seed oil, a little chopped shallot, salt, and pepper.
Drain the cucumber on a cloth, garnish plates, and drizzle with the sauce at the last minute. Incorporate vinegar at a rate of 2% of the flour weight into bread dough for extra fluffiness. For a special bread, add pumpkin seeds, vanilla bean seeds, dried raisins, and a little good cracked pepper.
Add a few drops to whipped egg whites. They will be very firm and lightly flavored.
Make a thick, thin syrup with vanilla vinegar for fresh, natural fruits like strawberries, peaches, or apricots.
