Ingredients: Organic mustard seed, organic caraway seed, organic coriander seed, organic turmeric rhizome, organic ginger rhizome, sumac (Rhus coriaria), organic cinnamon, combawa peel (Citrus hélix), laurel (Laurus nobilis), organic fenugreek, Batak berry (Zanthoxylum acanthopodium), organic garlic, clove.
"Masala" means "spice blend" in Hindi and "vindaloo", literally "wine and garlic".
This is a family of Indian dishes eaten mainly in the province of Goa, in southwest India.
Inherited from the Portuguese gastronomy present in this region since the 16th century, wine and vinegar replace coconut milk in South Indian "kari".
This peculiarity has given rise to a typical cuisine, deeply rooted for centuries, but with little conformity for Hindu and Muslim communities.
In my recipe, sumac is used as vinegar.
The acidic character of this black fruit gives my blend the particularity of its name. My "masala" flavors meat stews and marinades with fruit juice or sweet wine.
Baste oven-roasted chicken with my spice-scented juice.
Lightly sprinkle fresh or roasted pineapple slices at the last minute.
