Legend has it that a Scotsman living in Argentina came up with the recipe for "chimichurri". This gourmet and great lover of Hindu curry, which he brought from India, saw his source of supply dry up. The cooks in his employ were always asking for "give me curry, give me curry!
To satisfy them, he created a blend close to the flavors of the Asian condiment with local ingredients. In memory of his kitchen staff complaints, he christened it "Chimicurri"!
Since then, the spice has become an integral part of South American cuisine, as has the spice "Adobo", both used to season "asado", a Spanish word meaning "to grill" or "to roast".
"Chimichurri" is the equivalent of green sauce when prepared with fresh ingredients. The green or red chili pepper spices up the sauce to a greater or lesser extent.
My free interpretation of this condiment, is spicy, so it's wise to measure its dosage.
South American cuisine is colorful and spicy.
