Organic sunflower oil (Made in France), organic bear's garlic (Allium ursinum) organic onion.
A bit of history
The Greeks, Romans, and Egyptians flavored olive oil, the only oily ingredient of the time, with all sorts of plants and spices. Its value was considerable as it served as currency.
Wild garlic is a wild plant that is harvested from February to March and disappears in June at the end of flowering.
It is native to Europe and Asia.
It has the same properties as common garlic, but the flavor of the leaves and flowers is less strong. Like lettuce, it is rich in vitamins, and the entire plant is edible: the leaves, flowers, and even the bulb.
Medieval legends attribute magical properties to this plant. Its botanical name is "allium" for garlic and "ursus" for bear.
This large mammal sought the plant to purify itself after emerging from hibernation.
Placed in the pockets of a pregnant woman, the leaves are said to protect the unborn child.
How to combine wild garlic oil in your everyday cooking?
The long infusion of wild garlic leaves in sunflower oil tinges it a beautiful green and, of course, releases all of its aroma, except for the fresh garlic flavor.
The color of the oil is important when pairing it with foods. The green color doesn't complement all food colors unless you're specifically looking for it.
The flavor and aroma of garlic are a matter of taste for this plant, and not everyone appreciates it. Its culinary abilities are discreetly revealed by simply pouring a drizzle of oil over dishes.
Otherwise, this seasoning oil, which is best avoided for frying, can be used to season almost all summer raw vegetables, such as fall salads with dappled green cabbage cut like coeslaw, and endive. As a finishing touch, a drizzle of oil flavors a pan-fried vegetable dish, carpaccio of all kinds, and a few drops in a soup are a great addition.
