Ingredients: Marigold petals, organic fennel seed, savory. Assortment of organic aromatic plants: wild garlic, hyssop (Hyssopus officinalis), rosemary, lemon thyme, lemon balm, sage, coriander leaf, chives, lovage (Levisticum officinale), tarragon.
We all know the cheap mix commonly called "Herbes de Provence". It is composed of a few simple aromatic plants.
When you don't know how to flavor a quick recipe, this mix is very practical.
"Herbs of Maquis" is composed of 11 aromatic plants present in many vegetable gardens in the style of the ecclesiastical gardens inspired by Charlemagne.
I added a slight crunch with roasted fennel and anise seeds.
The delicious aroma of my bouquet makes you want to use it everywhere, in mixed salads, grilled meats or fish.
Sprinkle a pinch of "Herbs Maquis" on fresh goat or sheep cheese.
In 2 tablespoons of fresh cow cheese, add 1 good pinch of the mixture, 1 egg yolk, a little salt and a dash of rice vinegar. Mix then cover nice slices of bread garnished with a thin slice of raw ham. Grill quickly in the oven and serve with nice crunchy salad leaves.
On a daily basis, it is an easy-to-use aromatic blend. It is now up to you to associate it with your culinary creation, whatever whatever the season.
