A little history about oily macerates
In ancient times, macerates were cosmetic products. The Egyptians infused flowers in oil to perfume the skin and treat minor ailments.
It was also a remedy, the most well-known being the oil of thousand-wort flowers, a plant associated with magic and witchcraft. It was prescribed by Roman physicians for mental disorders. The Greeks, Romans, and Egyptians flavored olive oil, the only oily ingredient of the time, with all sorts of plants and spices. Its value was considerable because it served as currency.
My recipe for a flavored cooking oil or macerate
An oil macerate is an infusion of aromatic plants or ingredients, not an artificially flavored oil.
A macerate is a seasoning oil, not a frying oil.
It would lose its beautiful red color and the flavor of shrimp cooked for a long time with aromatics.
It flavors vinaigrettes and mayonnaises for raw vegetables.
It replaces butter in a Hollandaise sauce for grilled or steamed fish.
How to cook with shellfish-flavored oil?
Once you remove the cap from the bottle, there's no doubt about it! It's definitely shellfish-flavored oil. The condiment's beautiful red color is another clue.
With such a flavor, what should you do at first glance?
A vinaigrette or mayonnaise will come to mind, and without a doubt, this flavored oil is perfect. A vinaigrette with lemon juice and oil will season a potato, beetroot, or tomato salad. In summer, add fresh melon to a tomato carpaccio and thin slices of cured ham, and spoon it over your dishes.
Make a mayonnaise with egg yolk, mango mustard, orange juice, rice vinegar, a little honey or sweet soy sauce, a little mulled wine, and of course, shellfish-flavored oil, used sparingly. Serve this cold sauce with meat or fish carpaccio, drizzled with a little lemon juice.
