Shichimi togarashi is a traditional Japanese spice blend that usually consists of seven different ingredients. The name "shichimi" literally means "seven flavors" in Japanese, while "togarashi" refers to the spicy red pepper that is one of the basic ingredients of the blend.
Created by a pharmacist in the 1930s as a remedy, this spice has entered traditional Japanese gastronomy.
Seven flavors make up my blend that is both spicy and sweet.
Kampot red pepper from Cambodia ensures the power of the spice.
The black sugar from Okinawa combined with the iodized taste of the seaweed restores the balance.
I advise not to cook this spice for too long without risking wasting the cooking juice obtained.
