In Hindi, the "tandoor" is a clay oven in the shape of a jar, buried in the ground. Food cooked in this container is therefore "tandoori".
This type of cuisine is practiced in Punjab, a state bordering Pakistan, in northern India.
Traditionally, poultry or lamb soak overnight in a yogurt flavored with a mixture of spices called "masala". The meats are then freed from the marinade and cooked in the "tandoor" which also serves as an oven to cook pancakes and breads.
My spice is subtle, sweet and pleasant for all kinds of preparations.
It is useful without being bold by its lack of spiciness, for white poultry meats.
Added to a little chopped onion then browned, it flavors the cooking broth for coral lentils.
Incorporate my spice into sesame cream (tahini) and add the mixture to coconut milk to thicken it. Depending on the amount of mixture added, you will obtain a creamy soup or a thickened sauce to coat fried chicken cutlets or a grilled fish fillet.
Let yourself be tempted to cook a little Indian style and
order a sample of this spice to get closer to it.
It is also a table gift for your guests who have come to share your meal, and a small "discovery" gift for your friends and family.
