A bit of history
In Hindi, the "tandoor" is a clay oven in the shape of a jar, buried in the ground. Food cooked in this container is therefore "tandoori".
This cooking method is practiced in Punjab, a state bordering Pakistan, in northern India.
Traditionally, poultry or lamb soak overnight in a yogurt flavored with a mixture of spices called "māsālā". The meats are then freed from the marinade and cooked in the "tandoor" which also serves as an oven to cook pancakes and breads.

What's in my "Tandoori Masala" spice recipe?
Inspired by the traditional recipe, I created a slightly spicy blend that's quite different from my mild curry. The lemony flavor of Sichuan berries is noticeable when using it. Its pleasant aroma invites you to cook all kinds of dishes with exoticism.
How do I cook my Tandoori Māsālā?
Here are some chef's tips.
My spice is subtle, mild, and pleasant for all kinds of preparations.
It is useful, without being bold due to its lack of heat, for white poultry meats.
Added to a little chopped onion then sautéed, it flavors the broth used to cook red lentils.
Prepare a carrot or squash purée. Stir my spice into sesame cream (tahini) and add the mixture to boiling coconut milk. Season generously with tandoori and you get a creamy soup.
A small amount of this lightly vinegared preparation serves as a side sauce for all kinds of grilled or pan-fried meats.
A Vinaigrette or tandoori-flavored mayonnaise pairs well with seasonal asparagus, raw vegetables, or shellfish.
