Ingredients: Organic brown mustard seed, vegetal carbon powder, organic onion, organic cumin seed, organic coriander seed, Gorilla pepper (Pipper nigrum), ajowan (Trachyspermum ammi), black cumin seed (Nigella sativa), organic star anise.

Black curry, also known as "black pearl", "black kari", "Ceylon curry", "gothic curry", is a blend of spices from Sri Lanka.
I roasted all the seeds in my blend like coffee beans. Aided by vegetable charcoal, a natural colorant with an almost neutral flavor, the curry takes on a dark color, unusual for a spice.
The taste of this mild curry is equally surprising. A slight taste of caramel and coffee is perceptible on the tongue.  This is followed by a slight spiciness that surprises the taste buds. 
My condiment is used in dilutions: coconut milk or vegetable milk of any kind, vegetable and meat broths. 
Sprinkle it over cooked vegetables at the last minute and it will surprise gourmets. 
Season beef steaks or poultry escalopes with my curry at the end of cooking.
Make a cold sauce with a little of my Black Mustard diluted in apple juice and a little Verjus.
Add a spoonful of black curry and bind with rapeseed or toasted sesame oil.
Drizzle this sauce over the white of the asparagus, or add it to the edge of a plate garnished with a carpaccio of salmon or raw beef.
