Organic blond mustard seed, yuzu juice, flower honey (Local Beekeeping), organic turmeric, chickpea flour, salt, organic rice vinegar (Made in France).
A bit of history
Ground mustard seeds, known since ancient times by the Greeks, Egyptians, and Romans, were added to foods.
From the 1st-century AD Roman agronomist Columella to Apicius and his cookbook "De Re Coquinaria," Roman mustard recipes were introduced to Gaul under the name "mustum ardens," meaning "burning must," which became the word "mustard."
It was from the 13th century onward that recipes appeared in France with condiments made near the great vineyards such as Bordeaux and Reims.
In India, and mainly in Bengal, cooked mustard seeds are used to flavor oil.
In France, a decree defines the list of ingredients authorized to obtain the appellation of mustard. The most common condiments consist mainly of mustard seed, honey, white wine or vinegar and milk.
A fragrant mustard must be a very aromatic, spicy and tangy condiment.
My recipe for sweet yuzu mustard
Yuzu is an iconic Japanese fruit. It combines the flavors of lemon, mandarin, and grapefruit. This aromatic cocktail characterizes its exoticism.
Its silky acidity is common to citrus fruits.
In my recipe, it is the main acidic agent.
To highlight the sweetness of the condiment, locally harvested flower honey adds an additional flavor.
Finally, the beautiful lemon yellow color of the mustard is naturally obtained with turmeric.

For everyday use and with meals, swap your Dijon mustard for a gourmet mustard that will enhance your dishes. The tangy flavor is the dominant flavor in my recipe.
The spiciness is moderate because blond mustard seeds are less spicy than brown or black seeds.
In cooking, a flavored mustard will brighten up your dishes.Mix mustard and egg and, in fine breadcrumbs, coat thin chicken cutlets. Cook in a buttered pan and serve chopped tomatoes with herbs as a side sauce.
Make a mayonnaise with 1 tablespoon of yuzu mustard, 1 tablespoon of pastis, 1 egg yolk, 1 tablespoon of rice vinegar, and 10 cl of sunflower oil or citrus oil. Make large potato fries, season with salt and sprinkle with paprika. Serve immediately.
Mix yuzu mustard into a celery purée, add eggs, chickpea flour, and a little cream. Mold and cook in a bain-marie in a hot oven.
